Chicken salad is a weird concept isn't it It's chicken paste, basically. So you can imagine I always thought it was super unappealing, but found myself enjoying it if it was mock chicken salad. My first introduction to the concept was at Earth Fare. I'd grab a little half pint every time I went and they had it in stock. Then they closed! But now they are back! And their deli chef went to Rosewood Market and made a pretty much exact replica of the vegan deli style mock chicken salad there too.
So I made some mock chicken salad that I swear stacks up to the versions at Earth Fare, and Rosewood Market, and especially the less-good one at Whole Foods. The only reason I need an at-home version is because Patrick loves the stuff and could easily scarf down a half pint before I've finished unloading the groceries.
Given that I've never been much of a chicken salad person, I had to look up how normal people eat it. Looks like on a croissant sandwich is a popular option, as is wrapped in a lettuce cup, and with crackers are the three most popular ways to eat chicken salad. Vegan chicken salad shouldn't be any different, right

That last thing didn't start happening until the last time I made this vegan chicken salad. He was pretty good until the day I started shooting the video (which you can view at the bottom of this post) and during the 15 seconds while I had my back turned to get some dill out of the fridge, he made his way onto the counter and started stuffing his little face with chickpeas.
Some recipes for vegan salady sandwich fillings use chickpeas on their own (like this one), and while chickpeas are great, they're not fooling anyone. Seitan on its own is quite chickeny, but it's a little too firm for chicken salad by itself. Mix it with some smashed chickpeas and you've got the perfect texture.
You can use homemade seitan or store-bought. If you use store-bought, you'll need exactly one eight ounce package. If you make it yourself using my recipe, go with the chicken flavor (I guess that's kind of obvious!), and you'll need about a half of a batch, or one slightly scant cup once it's diced.

The best (mock) chicken salad I ever had was from a farm stand in Hawaii. This recipe produced a chicken salad that was close, but I really need to go back to Hawaii to be sure. Haha!Seriously, it was delicious and I am running my fork around the empty bowl as I write this. I bragged to my vegan sister about it, but she thinks her torn pre-frozen tofu recipe is wonderful, so I challenged her to a chicken salad smack-down at the next family get-together. I know who is going to win!!! :-)
Love this chicken salad recipe. For variety, today I omitted the dill and added (oriental) curry powder to the mayo, some dried cranberries and the tiniest pinch of cayenne (to balance the sweetness of the cranberries). OMG!!! HAVE ALREADY MADE THIS FOUR TIMES,!I had never made chicken salad but this looked delicious so I bravely made it doubting very much my husband would like it! Well, he LOVES IT!!! He has requested it a couple times now. We just eat about half cup to a cup out of a little bowl or with ritz crackers. I also add a half an apple. I boiled the chicken breasts the night before and made the salad in the morning. I am allergic to berries, so used chopped cherries instead. I tried them last night with some BBQ baked beans and I absolutely loved them. I had only tried seitan once before and that was in a Bosh \"chicken nugget\" recipe which came out very dry, crumbly and chewy.
